Its Lazy Its Rocking™ It Lulls You To Sleep!

It was a lazy, yet one hell of a ‘rocking’ train journey, the only one, I must confess, I have had through the mountains. With three school-time friends (all of us in our late 50s) for company, when the journey finally ended in the cool climes of Shimla, little over four hours later, it almost felt like we had lived a dream!

Yes, you guessed it right! We wanted to enjoy a British era experience, and we soaked in the fun and joy, every moment of it, to our heart’s fill.

The excitement began a day before we embarked on the journey early July, and none of us would have slept that night. Getting up from bed in our respective homes in Chandigarh at an unearthly hour, getting ready, collecting at a common place, and reaching the Kalka railway station by car, to be in time to catch the train leaving at 0525 hrs, sent our adrenalin rushing.

Anyway, we were well within time as we got off our car in front of the impressive heritage building. On entering, we found the platforms equally well maintained and neat and clean. It was still slightly dark when we made our way to the designated platform. And, lo and behold, we were confronted with what looked like a small old time school bus with a biiiiiggggg snout!

Indeed, it was the vintage train (Rail Motor Spl.) which was to take us on a long winding journey, navigating us through the twists and turns of the hills – just one small coach, seating just over a dozen passengers, with its own diesel engine, as in a bus. The headlamp of the train was still on in the twilight hour as we were ushered in through one of the two doors – front and back, one each on either side.

It was still cool when we boarded the train, and realised only sometime after embarking on the journey that the coach had no fans at all, let alone air conditioning. There wasn’t any toilet either. But our minds were soon put to rest by the co-driver (there were two of them exclusively for the dozen of us passengers, both driving half the way), assuring that the train could be halted at any of the 20-odd stations on the way, if the need arises.

The train, which took us through some of the most picturesque surroundings and railway stations and dozens of tunnels all the way to Shimla, started at a gingerly pace, the driver (manning an iron wheel with a prop, not used for steering, we were told later) repeatedly sounding the ho to ward off odd stray dogs and cows and pedestrians (apparently on way to work) from the tracks. After the initial what looked like couple of kms, the single-coach train picked up some pace (by its own speed standards that is) but the ho was mandatory at every blind bend, and there were a countless number of them.

We were quite literally on vibration mode as the ‘kharrh-kharrh’ train lapped up the metres of the narrow gauge tracks, lulling two of the more tired of us friends to sleep. The train kept intermittently slowing down and then picking up some speed, and again either slowing down or halting at quaint little railway stations, which approached every few minutes.

There was a customary exchange of what looked like iron wire loops between the train driver and signalman at most of these stations, followed by entries on a register at an odd station.

Despite it being the peak of summer in the first week of July, the weather remained pleasant throughout the 90 km journey, there not being a single location where the train was not enveloped in the surrounding thick foliage and tall trees. This was in complete contrast to the eyesore barren and denuded hill surfaces and traffic snarls one encounters on a road trip to the ‘Queen of Hills’.

Spectacular views of lush green hills, slopes and valleys, the meandering roads, the enchanting hues of the rising sun and the occasional cluster of houses and passing townships, were tonic for the eyes and the soul. Trying to capture each and every of the amazing locales in frames on a mobile camera was an equally satisfying indulgence and kept me occupied,  while my friends stole a wink in between.

Cheerful faces of staff at each of the small to tiny railway stations, as they exchanged quick pleasantries with the drivers, were also memories worth cherishing.

From a height of 656 metres (2152 ft) at Kalka the train cut through the foothills of the Shivalik ranges, before approaching the higher hills. Passing through Dharampur, Solan, Kandaghat, Taradevi, Barog. Salogra, Totu (Jutogh) and Summerhill stations, the train finally culminated its journey at Shimla (2,075 metres or 6,808 ft) railway station.

Apart from Kalka and Shimla railway stations, the only big station on the way was Barog, which was also the most scenic. There, we were welcomed at the station by cheering tourists, who made it a point to take a good hard look at the train from outside and inside. Besides being picturesque, the station, which emerges after the longest (1,143 metres long) of the 100-odd tunnels on the route, boasts of guest rooms, a cafeteria and tiny mobile eateries, and not to forget nice and clean toilets.

On arrival at Shimla, and after a quick freshen-up at the cute and comfortable Hotel Alpine Heritage Residency, far far from the madding crowds on the intersection of Cart Road and Shimla bypass from Khalili side, we were on our way to explore the calm and serene surroundings.

We were lucky enough to be able to take a sneak peek at the majestic and imposing building of the Indian Institute of Advanced Study (earlier called the Vice Regal Lodge) and its expansive lush green gardens, otherwise closed because of the pandemic.

After a few more scenic locales, we settled down to a sumptuous lunch in the restaurant at the state-run Hotel Holiday Home. A well earned rest, followed by a quick recce of a crowded Mall Road, and we were able to squeeze out a table booking at the packed The Oberoi Cecil, where a hearty ‘gup-shup’ and a light Mediterranean dinner rounded off our day.

A more than comfortable night stay at the hotel and a ‘parantha’ breakfast refreshed us for the retu journey. Rail Motor Spl welcomed us back as we jumped in. Departing from Shimla at 1140 hrs, we reached Kalka by 1630 hrs with a sharp shower on the way keeping the weather cool right down to the foothills.

The Kalka-Shimla Railway, one of the three British era train routes in India to be declared mountain railways of India World Heritage Site (the others being Darjeeling Mountain and Nilgiri Mountain Railway), has 20 stations, 103 tunnels, 912 curves, 969 bridges and 3% slope (1:33 gradient) on the route.

Ultra-Mode Tertiary Care Services To Begin In Nov, Says Punjab CS

Work on the Homi Bhabha Cancer Hospital and Research Centre in Medicity, New Chandigarh, a unit of Tata Memorial Centre Mumbai, under the Department of Atomic Energy, is nearing completion, and the 300-bed state-of-the-art tertiary care facility will be thrown open to patients by November this year.

An assurance to this effect was given to Punjab Chief Secretary Vinni Mahajan while inspecting the site to review the progress of works. The Chief Secretary was briefed among others by Dr RA Badwe, Director Tata Memorial Centre Mumbai and Dr Rakesh Kapoor, Director, Homi Bhabha Cancer Hospital and Research Centre, New Chandigarh.

Life In The hospital will cater to cancer patients from the entire northe region, comprising Punjab, Haryana, Himachal Pradesh, Jammu and Kashmir, Rajasthan, Uttarakhand and Uttar Pradesh.

“The hospital will start radiotherapy, radiology, CT scan, MRI, ultrasound, x-ray, mammography, medical oncology, chemotherapy, day-care ward, pathology and lab facilities, minor OT, besides initiating OPD services such as surgical oncology, medical oncology, radiation oncology, palliative care preventive oncology,” The Chief Secretary was quoted as saying in a press release issued by her office.

The cancer care center will be equipped with high-end diagnostic and treatment facilities such as two linear accelerator, brachytherapy, PECT CT, bone marrow transplant (BMT), CT simulator, MR simulator, interventional radiology and surgical facilities, besides day-care centre, ICU and recovery units, detailed Ms Mahajan.

The hospital is being set up with a sanctioned cost of Rs 663.74-crore in a built up area of 40,545 square meters for which 50 acres of land has been provided free of cost by the Punjab Government.

The press release said, the hospital will be fully IT-based with electronic medical records facility. It will also be interlinked with all the Tata Memorial Centres located across the country. This will help the patients of this region get online super-specialty consultation for managing various types of cancer ailments under the disease management groups (DMGs).

Besides residential hostels for doctors and nurses and residential accommodation for faculty, the hospital will also offer stay facilities for cancer patients in a specially-built dharamshala.

Pointing out that two state-of-the-art cancer hospitals are already functioning at Sangrur and Bathinda in Malwa region of the state, Vini Mahajan said while the Homi Bhabha Cancer Hospital in Sangrur has so far treated more than 23,000 cancer patients, the advanced cancer diagnosis, treatment and research centre in Bathinda has cured more than 2,500 cancer patients.

Informing that a tertiary cancer centre is also being established in Fazilka to further strengthen the cancer treatment facilities in the state, she said, “Major civil work has been completed and it is likely to start operations next year.” More than 65,000 cancer patients have been provided cashless treatment under the Mukh Mantri Punjab Cancer Rahat Kosh Scheme at various cancer hospitals in the state, she added.

Among others present during the Chief Secretary’s visit to the hospital site were Punjab Principal Secretary PWD Vivek Pratap, Mohali Deputy Commissioner Girish Dayalan and Dr Ashish Gulia, officer in-charge of the Homi Bhabha centre.

Medicity, in New Chandigarh, is spread over 250 acres in the immediate vicinity of PGIMER Chandigarh and comprises sites for multi-specialty and super-specialty hospitals, medical research institutes and housing facilities for doctors and other staff.

Nari Shakti™ Thwarts Attempts To Deny I-Day Celebrations

Nari Shakti came to the fore in full measure on Sunday to thwart attempts made by the promoter’s maintenance company at one of the most sought after properties in the tricity, ATS Casa Espana in Sector 121 Mohali, to deny the more than 200 families, already populating five high rise towers, their fundamental right to celebrate the 75th Independence Day their own way.

After getting a circular from ATS Maintenance Services – Casa Espana, the maintenance arm of ATS Infrabuild Limited, that due to “unavailable circumstances”, the Flag Hoisting Ceremony, as scheduled earlier, has been “withdrawn”, the Ladies Club of the community took up cudgels to defy the order and staged a power-packed and entertaining programme, immersed in patriotism, at the central amphitheatre, as earlier planned. The men also enthusiastically joined in support.

In the absence of a flag post, which had been taken into custody by the maintenance company, the 50-odd strong gathering raised their own flags in flower pots and in their hands. To mimic flag hoisting the Chief Guest on the occasion, (naval) Commodore SP Singh (retd), one of the senior most members of the community, raised the tricolour high over his head with two other ex-Army officers.

Ritually, the programme began with the singing of the national anthem and the national song,  and later branched into singing and dancing to popular filmi songs of patriotism and pride like Chak De, Buri Nazar Na Hampe Dalo, Rangg De Basanti, Mere Desh Ki Dharti, etc.

The celebrations were rounded off with the distribution of ladoos.

The lives of residents in ATS Casa Espana, Sector 121, Bar Majra village, have been thrown into turmoil ever since ATS Maintenance Services – Casa Espana slapped a whopping 37% enhancement in the already high monthly Common Area Maintenance (CAM) charges.

The residents have been waging a long struggle to rollback the enhanced charges which they are calling arbitrary. They are demanding details of accounts of collections and expenditures to arrive at a reasonable figure of monthly CAM charges, which ATS Maintenance Services – Casa Espana has been very slow in furnishing.

The residents have raised dozens of banners in their balconies spelling out their demands, which include, apart from the rollback of enhanced monthly CAM charges, early completion of the remaining six towers and the boundary wall on security grounds, etc.

Pioneers Of Microbrewery Concept In Tricity Extend Footprint To Mohali

After Hops n Grains in Panchkula a decade ago and The Great Bear in Chandigarh in 2016, genial couple Priyanka and Amritanshu Gupta, who brought the microbrewery concept to the tricity, have just extended their footprint to Mohali.

Starting this week, Hops n Grains, spread over three expansive floors on Airport Road in Sector 79, opened its door to guests with a winning combination of rugged but warm ambience, freshly minted beers, international brands of liquor, world cuisine and personalised service.

With a decade of brewing excellence behind them, the couple now sound confident about speeding up their expansion plans for the adjoining underserved towns and cities.

Upbeat about the future of the bar and kitchen business despite the recent setbacks, Priyanka and Amritanshu shared with news website LifeInChandigarh.com: “The interiors of Hops n Grains Mohali may be new, but the freshly minted beer, the sheer variety of it, is the same as the lovers of freshly crafted beer have come to associate the Hops n Grains brand with.

“To retain a sense of freshness, the restaurant would be introducing new beers every few months, while the marquee drinks like Weiss Beer, Dunkel Dark and Premium Lager would continue to be served.

“Right now we are serving Wheat Beer, Belgian-style Witbier, Black Rice, Green Apple, Peach and German-style Bock. Beers are served in 500 ml mugs and beer towers ranging from 2000-3000 ml. Along with this, a wide variety of other premium hard liquor are available in the menu,” they emphasised.

The couple promise to stick to their avowed traits of their business strategy – attention to detail and delightful food, which includes signature snacks and main course dishes like Penne Al Fungi, Grilled Chicken Breast and Mushroom Hara Pyaz. Punjabi Fish curry and Nutty Veg Kofta are some of the new additions to their main course menu.

Head Chef Paramjeet Singh lists out Churros desserts (crispy on the outside, soft and tender on the inside with an irresistible flavour), Jaegersschnitzel (German dish), Veg Shammi Kebab, Corn Jalapenos, Zafrani Murgh Tikka and home-made Thai curry (made in-house from scratch) and South Indian Prawns as other specialities from his kitchen.

Amritanshu has high hopes about Hops n Grains doing good business in the fast emerging buzzing urban metropolis of the region that Mohali is, with a flourishing IT, higher education, health and wellness and real estate sectors. 

Designed by tricity’s well known designers Nikhil and Suvrita, the newer Hops n Grains has interiors which are contemporary, yet classy, to cater to all shades of guests from youngsters to the older generations. The red bricks and old style lamp shades bring all round vibrancy to all three floors. The central element of the design is the imposing spiral staircase which runs through the first and second floors.

Each floor has its distinct identity. The first floor has aesthetically designed arches and chandeliers which take you back to the era gone by. The other floors have special wooden paneling made of reclaimed railway sleeper wood.

With comfort being the motto, the sitting comprises of mixture of cane chairs, leather clad sofas and live edge tables some of which have sandblasted black top finish.

Dishwasher Sales To Cross Rs 667 Cr By 2026, Says Kamal Nandi

A work-from-home environment, reluctance to let in domestic help, increased emphasis on comfort & convenience and health & hygiene because of the pandemic has given a big push to the sale of dishwashers. Capitalising on this surge in demand, leading home appliances player Godrej Appliances has entered the market with its new range of Godrej Eon dishwashers.

Still at a nascent stage, the dishwasher category is already selling 1,00,000 units annually in the Indian market and this is expected to grow further at a fast clip in the coming five years to top Rs 667 crore in sales by financial year 2026. Godrej Appliances has targeted to claim 15% of this market share by the end of the current financial year.

Godrej Appliances had entered the market with the new Godrej Eon dishwashers for online sale in select cities exclusively on Amazon in October 2020 and seeing the encouraging response, the new range is now being offered pan India in offline stores as well.

Commenting on the launch, Kamal Nandi, Business Head and Executive Vice President – Godrej Appliances claimed in a virtual press meet, “The new Godrej Eon dishwasher range,  powered by steam wash, anti-germ UV-Ion technology, smart wash technology and direct and triple wash functions, as well as turbo drying, delivers deep and hygienic cleaning, perfect for Indian kitchens and Indian cooking.”

Onion & Tomato Came Into Punjabi Cuisine At A Later Stage™

Is there anyone among us who wouldn’t say that mother’s recipes always touch an emotional chord with him/her. ‘Cook With Mother Cook With Punjab’, a cookbook by city’s very own chef and hospitality consultant Vikas Chawla, released recently in Chandigarh by renowned chef Dr Manjit Singh Gill, is an exhaustively detailed compilation of 70 such recipes dedicated as much to the masterly culinary skills of all mothers of Punjab, as it is to his mother Asha.

Coming from years of practice and emotional attachment to the recipes, the pictorial and content rich cookbook, running into 180-odd pages, has been published by the famous Karnal-based JBD Group, this being their first foray outside of educational books.

Priced at Rs 997, the cookbook, with a global appeal, is currently available online on Amazon.  

At first look, the recipes look very familiar, about which one might be tempted to think “what’s new in them, all these are already available in other cookbooks and on YouTube channels”, but Chef Vikas Chawla swears by the uniqueness of the cookbook in an exclusive chat with news website LifeInChandigarh.com.

“Years and years of practice and emotions have gone into perfecting each and every aspect of the recipes presented in the cookbook. Care has been taken to explain each and every aspect down to minute details, right from ingredients, to pre-preparation, to procedure of preparation, to serving and important tips. Every effort has been made to keep each and every recipe simple and healthy without compromising on great taste,” he asserts.

“I have made concerted efforts to ensure that after reading my recipes, even a greenho in cooking is not left in any doubt. Reading through the text time and again from a readers’ point of view, I have also filled in the gaps, wherever these existed ‘between the lines’, Chef Chawla emphasised.

It took Chef Chawla four long years to complete the cookbook. “Had it not been for the pandemic, when I found more time to myself, this cookbook would still have been work in progress. In the first four months of lockdowns in 2020, I was able to complete the writing part of it. It took another eight months of editing, reediting and rewriting before it was done and dusted.”

The writer, who is also a keen photographer, has embellished the cookbook with his own photographs. The designing of the cookbook is also his handiwork.

For the convenience of aspiring home chefs and hospitality students, in particular, the cookbook starts with very basic lessons in cooking such as preparing good whole wheat roti/chapati dough and making rotis/chapatis.

“Onions and tomatoes were originally never a part of the ingredients in Punjabi recipes. They came much later and now most Punjabis have come to believe that good food cannot be prepared without these two ingredients. In most of my recipes, you will not find onion or tomato in the ‘tadka’. And yet, the recipes are delicious and healthy,” Chef Chawla explains.

An entire section of the book is dedicated to a variety of paranthas, other than the usual allu and gobhi ka paranthas, prepared at the chef’s own home. These include Methi Parantha, Stuffed Besan Parantha and Bhune Besan ka Parantha.

 

Among the dishes are Dal Makhani, Maah Dal Amritsari, Sarson Da Saag, Shalgam Saag, Sukka Kala Chana, Kathal Biryani, Chana Dal Pulao, Bhune Besan ki Kakdi, Adrak Lehsun Tariwala, Bhune Baingan ka Bharta, Karela Kachri, Ghiya Kofta, Kadahi Mushroom, Punjabi Andaa Alu Bhurji, Punjabi Mutton Tariwala and Butter Chicken.

The book also includes hidden secret recipes of authentic snacky foods like Birista (golden fried crisp onions), Chana Bhatura, Bedmi Poori, Kulcha Matar, Spicy Soyabean Dip, Gulgule, Baigan ke Pakode and much more. A few chutneys also find a place in the cookbook, like Kache Aam ki Chutney, Tadke Wali Pyaz Chutney and Tadke Wali Pudina Chutney.

A variety of desserts includes Ghee Shakkar Bread Toast, Chawal Ki Kheer, Sabudana Kheer, Besan Burfi, Gurh ka Halwa, Asli Atta Gurh Pinni, healthy eggless Atta Haldi cake, Sooji Halwa, Dhaniya Panjeeri, Healthy Hot Chocolate Pudding, Atta Oats Brownie, etc.

Gurh Wali Masala Chai is also a must try.

Releasing the book at the launch ceremony, celebrated chef Manjit Singh Gill described Vikas Chawla as a chef driven by a high degree of knowledge, passion, hard work and innovation. In the hands of Vikas, with a bit of creativity and discipline, dishes like Samak Rice Khichdi, Gur ki Seviyaan, Atta Kulcha, Amritsari Chholey, Sukka Kala Chana, Archari Alu, Maah Dal, Gur Atta Pinni, etc., made with seemingly common ingredients, tu out to be extremely pleasurable and scrumptious. 

Manjit Gill, President, Indian Federation of Culinary Associations, and 2018 recipient of the coveted Worldchefs Escoffier Medal, instituted by the World Association of Chefs Societies, feels that food is so integral to our lives and partaking of good food is a complete act of happiness. His definition of good food is: something which makes you feel good while eating and look forward to eating it again.
